Delicious Instant Pot Rotisserie Chicken at Home

Ingredients

  • whole chicken
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon thyme
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper
  • 1 lemon (quartered)
  • olive oil
  • 1 cup broth

Preparation

  1. Pat dry the chicken with paper towel.

  2. Combine in a bowl: 1 teaspoon salt, 1 teaspoon pepper, 1 teaspoon thyme, 1 teaspoon paprika, 1 teaspoon garlic powder, 1 teaspoon onion powder, and 1/2 teaspoon cayenne pepper.

  3. Rub the chicken with the spices all around, including inside the cavity.

  4. Stuff the chicken with 1 quartered lemon.

  5. Set Instant Pot to sauté and heat olive oil.

  6. Place chicken breast down and sauté for 4 minutes.

  7. Flip the chicken and sauté for another 4 minutes.

  8. Remove the chicken from the Instant Pot.

  9. Add 1 cup broth and scrape any brown bits.

  10. Place the metal trivet in the Instant Pot and add the chicken.

  11. Close the Instant Pot and pressure cook for 25 minutes.

  12. Naturally release pressure for 15 minutes.

  13. Remove the chicken and shred it.

  14. Optionally, transfer to a baking sheet and broil for a few minutes to crisp the skin.
