Vegan Avocado Chocolate Tart
Ingredients
Crust
- 1 cup oats
- 1/2 cup almonds
- 1 cup pitted dates
- 1 tbsp raw cocoa powder
- pinch of salt
- 2-3 tbsp of cold water, if needed
Avocado cream
- 3 ripe avocados
- 1/2 cup raw cocoa powder
- 1/2 cup maple syrup
- 1/4 cup full fat coconut milk
- 1 tsp vanilla extract
Preparation
In a food processor, pulse blend oats and almonds until broken into very small pieces.
Add dates, salt and cocoa powder.
Process until well combined and the dough starts to form.
If needed, add water, tablespoon by tablespoon, and continue blending until the dough comes together.
Press the dough into tart form and freeze while preparing avocado cream.
Add all the ingredients for the avocado cream to the food processor and blend until smooth and creamy.
Taste and add more maple syrup if needed.
Transfer the cream onto the cake crust and chill in the fridge for at least 1 hour before serving.
