Vegan Chickpea Swirl Brownies

Ingredients

  • 1 can chickpeas
  • 2 tbsp nut / seed butter of your choice
  • 2 tbsp chocolate spread
  • 2 tbsp cacao
  • 50 g chocolate chips (or more ?)
  • 1/4 tsp vanilla
  • 1 tsp baking powder
  • generous pinch of sea salt

Preparation

  1. Preheat your oven to 180C or 350F

  2. Add the chickpeas and dates to a food processor and blend until pretty smooth

  3. Add flour, vanilla, baking powder and sea salt and blend again

  4. Scoop half of the mixture out

  5. Add nut / seed butter to one half, add the chocolate spread and cacao to the other one

  6. Mix both

  7. Pulse or spoon the chocolate chips through the mixture

  8. Taste if the dough needs a little more sweetness

  9. If so, you can add some syrup or stevia if you like

  10. I never do

  11. Scoop the mixture into a lined brownie tin, but be sure to spread out the peanut butter and brownie mixture over the tin so that there’s color difference

  12. Use a tooth pick or the back of the spoon to make more swirls

  13. If you want them to be a little bit higher, just use half of the brownie tin

  14. Bake at for 20 minutes

  15. Let them cool, cut them into squares and ENJOY
