Vegan Orange Almond Cake
Ingredients
- • 1 1/2 cup of flour
- • 1/2 cup of almond meal
- • 2 tsp of baking powder
- • 3/4 cup of sugar
- • 1/2 cup + 3 tbsp of non-dairy milk
- • 1/2 cup of fresh orange juice
- • 1/3 cup of melted coconut oil
- • 2 tbsp of flaxmeal
- • 1 tsp of vanilla essence
- • zest of 1 orange
- • 1 tsp of apple cider vinegar
Preparation
Pre-heat the oven to 180C/360F and line an 8inch cake tin with a circle of baking paper at the bottom
In a bowl mix the dry ingredients together
In a separate bowl mix with a whisk the squeezed orange juice, plant milk, melted coconut oil, orange zest, apple cider vinegar and vanilla essence
Pour the liquid ingredients in the flour bowl and fold gently with a spatula until well combined
Pour in your cake tin and place in the oven to cook for 45 minutes at 180C/360F
Leave to cool on a wire rack and spread some orange marmalade on top for a simple glaze
Keep in an airtight container
