Vegan Pepperoni Pan Pizza

Ingredients

  • pizza sauce
  • 2 tbsp olive oil
  • 2 cloves garlic
  • 1 tbsp sugar
  • 2 tsp dried oregano
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp crushed red pepper
  • pizza toppings
  • olive oil
  • 8 oz vegan mozzarella
  • vegan pepperoni
  • 1-2 jalapeños, sliced
  • red onion, sliced

Preparation

  1. Make pan pizza dough

  2. In a mixing bowl or the bowl of a stand mixer whisk together flour, salt, and instant yeast

  3. Add the water and mix with a wooden spoon until it forms a shaggy dough and the dough rest for 10 min

  4. Or knead with hands to stand mixer

  5. Form dough into a ball and then place in a lightly oiled bowl

  6. Roll dough in the oil and cover the bowl

  7. Set aside to rise for 11/2 to 2 hrs, or until doubled in size

  8. Pizza sauce:

  9. Add olive oil, garlic, sugar (if using), dried oregano, garlic powder, onion powder, salt, crushed red pepper, and a couple spoonfuls of the tomatoes to a blender

  10. Process until smooth and emulsified

  11. Add the rest of the tomatoes and blitz a few times until just ground up

  12. Pour sauce into a saucepan and bring to a simmer over medium heat

  13. Turn the heat to low, partially cover and simmer for 30 min, stirring occasionally

  14. Turn off and set aside when done

  15. Assemble the pizza

  16. When dough has risen, turn the oven to 550 ºf and set a rack one level below the center

  17. If you have a pizza stone place on the rack

  18. Pour some olive oil into a 12

  19. Gently ease dough into the skillet and stretch to fill

  20. If dough resists, let it rest a few minutes then try again until it covers the skillet

  21. Let rise while the oven preheats, about 30-45 min

  22. Cover dough with sauce working all the way to the edge

  23. Then top with some of the vegan pepperoni

  24. Sprinkle vegan mozzarella, then top with more vegan pepperoni, sliced jalapeño, red onion

  25. Bake the pizza for 12-15 min until the cheese is melted and turning golden

  26. Transfer the skillet to a higher rack and broil for 1-2 min until cheese browned
