Delicious Spinach Pizza Pinwheels Snack

Ingredients

  • 1 cup warm water
  • 1 tbsp rapid yeast
  • 2 cup flour
  • 1+1 tbsp olive oil
  • 1 tbsp sugar
  • A pinch of salt
  • 4 large handfuls of spinach
  • 1/2 red onion
  • 1 garlic clove
  • 2 tbsp fresh basil
  • 1/2 cup of pizza sauce + more for dipping
  • 1/4 cup shredded vegan mozzarella (optional)

Preparation

  1. Mix warm water and yeast in a large bowl and let sit for 10 minutes until foam appears.

  2. Add flour, 1 tbsp oil, sugar, and a pinch of salt to the mixture and mix together.

  3. Using a stand mixer with a dough hook, mix on medium for 5 minutes or knead by hand for 7-8 minutes until dough is stretchy.

  4. Cover dough with a damp tea towel and let rise for at least 1 hour.

  5. Meanwhile, heat 1 tbsp oil in a pan over medium heat and sauté onions until soft, about 5 minutes.

  6. Add garlic and cook for 1 minute.

  7. Add spinach one handful at a time and let it wilt.

  8. Once dough is ready, roll it out on a floured surface into a large rectangle.

  9. Top with pizza sauce, spinach mixture, fresh basil, and cheese.

  10. Roll up the dough starting from one long side to create a log.

  11. Cut the log into 2-inch pieces and place on a parchment-lined baking sheet.

  12. Bake pinwheels in a preheated oven at 425 degrees F for 15-17 minutes.

  13. Serve with pizza sauce for dipping.
