Tasty Spinach Pizza Pinwheels for Kids
Ingredients
- 1 cup warm water
- 1 tbsp rapid yeast
- 2 cup flour
- 1+1 tbsp olive oil
- 1 tbsp sugar
- A pinch of salt
- 4 large handfuls of spinach
- 1/2 red onion, finely chopped
- 1 garlic clove, minced
- 2 tbsp fresh basil, loosely chopped
- 1/2 cup of pizza sauce + more for dipping
- 1/4 cup shredded vegan mozzarella (optional)
Preparation
Mix warm water and yeast in a large bowl and let sit for 10 minutes until foam appears.
Add flour, 1 tablespoon oil, sugar, and a pinch of salt to the mixture and mix together.
Knead the dough using a stand mixer for 5 minutes or by hand for 7-8 minutes until stretchy.
Cover the dough with a damp tea towel and let it rise for at least 1 hour.
Meanwhile, heat 1 tablespoon oil in a pan over medium heat and sauté onions until soft, about 5 minutes.
Add garlic and cook for 1 minute.
Add spinach one handful at a time and let it wilt.
Once dough is ready, roll it out on a floured surface into a large rectangle.
Top with pizza sauce, spinach mixture, fresh basil, and cheese.
Roll up the dough from one long side to create a log.
Cut the log into 2-inch pieces and place on a parchment-lined baking sheet.
Bake in a preheated oven at 425 degrees F for 15-17 minutes.
Serve with additional pizza sauce.
