Vanilla Coconut Oatmeal with Berries and Chocolate

Ingredients

  • 0.5 cup (125 ml) coconut milk
  • 0.5 cup (125 ml) water
  • 3/4 cup (175 ml) oats
  • 1 tbsp maple syrup
  • Dash of vanilla
  • Dash of salt

Toppings

  • strawberries
  • raspberries
  • a few squares of your fav chocolate
  • quinoa puffs
  • fresh mint or lemon balm

Preparation

  1. Put all ingredients except toppings in a pot and bring to a boil, reduce heat and simmer for 3-5 minutes until you reach the creaminess you like.

  2. Stir occasionally.

  3. Once the oatmeal is done, pour into your bowl and put the chocolate squares on immediately to let them melt.
