Overnight Oats with Almond Butter and Maple Plums

Ingredients

  • Oats
  • 1 teaspoon vanilla extract
  • 2 large spoonfuls almond yogurt
  • Coconut milk
  • Water
  • 1 teaspoon almond butter
  • Maple syrup
  • 2 plums
  • 85% dark chocolate
  • Chopped almonds
  • Cacao nibs

Preparation

  1. Soak the oats with 1 teaspoon vanilla extract and 2 large spoonfuls of almond yogurt in coconut milk overnight.

  2. In the morning, add 1 teaspoon almond butter and more liquid (water and coconut milk) while cooking the oats.

  3. In a frying pan, add a couple of tablespoons of maple syrup and 2 halved plums; cook by turning them until soft, sticky, and golden.

  4. Once the porridge is cooked, spoon it into a bowl, then add almond butter, melted 85% dark chocolate, chopped almonds, and cacao nibs, and enjoy.
