Honeysuckle and Caramelized Banana Oatmeal

Ingredients

Oatmeal

  • 1 cup oats
  • 1/2 cup coconut milk
  • 1 cup water

Caramelized honeysuckle bananas

  • 1 banana, chopped
  • 1/4 cup coconut milk
  • 1/4 cup water
  • 1.5 tbsp honeysuckle powder
  • 2 tbsp coconut sugar

Preparation

  1. Cook oats like normal by bringing them to a boil with the liquids, then reduce to a simmer until thickened.

  2. Add all caramelized banana ingredients to a non-stick pot or pan, bring to a boil, reduce to medium heat, and cook until the liquid has evaporated and only sticky banana pieces remain, stirring very often to prevent burning.

  3. Top the oatmeal with the caramelized bananas, fresh bananas, and any other desired toppings.
