Gorgeous Coconut Oats Bowl Overnight

Ingredients

  • 1/2 cup oats
  • 2 to 3 heaped tbsp coconut yoghurt
  • small handful toasted coconut chips
  • 1 tsp vanilla extract
  • 1 cup coconut milk

Toppings

  • almond butter
  • coconut chips
  • melted chocolate
  • blueberries
  • sliced banana
  • sticky maple almonds

Preparation

  1. Before bed, in a pan, add 1/2 cup oats, 2 to 3 heaped tbsp coconut yoghurt, a small handful of toasted coconut chips, 1 tsp vanilla extract, and cover with 1 cup coconut milk. Stir and cover, then leave to soak overnight.

  2. In the morning, add 1/2 to 1 cup coconut milk and gently heat, stirring regularly.

  3. Once cooked, spoon into a bowl and top with almond butter, coconut chips, melted chocolate, blueberries, a sliced banana, and sticky maple almonds.
