Christmas Snowman Chia Pudding

Ingredients

  • 1 cup water
  • 1 cup plant-based milk
  • 1/2 cup coconut milk powder
  • 8 tbs chia seeds
  • 1 tbs blue spirulina powder
  • 2 tbs maple syrup
  • 1/2 tsp vanilla

Preparation

  1. In a bowl, whisk all ingredients together then let it rest for 5 minutes before whisking again to remove all lumps.

  2. Cover and refrigerate for an hour or even overnight.

  3. Once set, add to your bowl and form a snowman with coconut, vegan chocolate chips for buttons and eyes, a carrot stick nose, and cinnamon stick arms.
