Butter Bean Curried Stir-Fry
Ingredients
- 100g mushrooms, chopped
- 1/2 green bell pepper, chopped
- 1 can butter beans, drained and rinsed
- 2 tsp curry powder
- 1 tsp turmeric
- 2 tbsp tamari
- 1 tbsp rice wine vinegar
- black pepper, to taste
- 1 tsp arrowroot powder
Preparation
Add the mushrooms and bell pepper to a non-stick frying pan, and cook for 3-4 minutes, until softened
Then, add the butter beans together with the curry powder, turmeric, tamari and rice wine vinegar
Season to taste with black pepper, then stir for 2-3 minutes
At the last minute, add the arrowroot powder and stir to allow the sauce to thicken
Serve immediately with rice or noodles of your choice
