Butter Bean Curried Stir-Fry

Ingredients

  • 100g mushrooms, chopped
  • 1/2 green bell pepper, chopped
  • 1 can butter beans, drained and rinsed
  • 2 tsp curry powder
  • 1 tsp turmeric
  • 2 tbsp tamari
  • 1 tbsp rice wine vinegar
  • black pepper, to taste
  • 1 tsp arrowroot powder

Preparation

  1. Add the mushrooms and bell pepper to a non-stick frying pan, and cook for 3-4 minutes, until softened

  2. Then, add the butter beans together with the curry powder, turmeric, tamari and rice wine vinegar

  3. Season to taste with black pepper, then stir for 2-3 minutes

  4. At the last minute, add the arrowroot powder and stir to allow the sauce to thicken

  5. Serve immediately with rice or noodles of your choice
