Spiced Meat and Rice Pilaf

Ingredients

  • 500 grams meat, cubed
  • 1 large onion, quartered
  • 3 cardamom pods
  • 3 black peppercorns
  • 1 teaspoon salt
  • 2 cups rice
  • 2 tablespoons oil or ghee
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 cup cooked chickpeas
  • 1 teaspoon turmeric
  • 2 teaspoons salt
  • 1/4 teaspoon black pepper
  • 2 teaspoons mixed spices

Preparation

  1. In a pot, bring water to a boil, add the meat, onion, cardamom, black pepper, and salt, boil for 30 minutes until meat is cooked, strain and reserve 3 cups of broth.

  2. Soak the rice for about 15 minutes.

  3. In a medium pot, heat the ghee or oil, add onion and garlic, stir until golden brown, add chickpeas and meat, stir for a few minutes to lightly brown the meat, add rice, turmeric, salt, black pepper, mixed spices, and the reserved broth.

  4. Bring to a boil on high heat for about a minute, then cover and cook on low heat for about 20 minutes until rice is cooked, serve hot with yogurt and cucumber salad.
