Spiced Meat and Rice Pilaf
Ingredients
- 500 grams meat, cubed
- 1 large onion, quartered
- 3 cardamom pods
- 3 black peppercorns
- 1 teaspoon salt
- 2 cups rice
- 2 tablespoons oil or ghee
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 cup cooked chickpeas
- 1 teaspoon turmeric
- 2 teaspoons salt
- 1/4 teaspoon black pepper
- 2 teaspoons mixed spices
Preparation
In a pot, bring water to a boil, add the meat, onion, cardamom, black pepper, and salt, boil for 30 minutes until meat is cooked, strain and reserve 3 cups of broth.
Soak the rice for about 15 minutes.
In a medium pot, heat the ghee or oil, add onion and garlic, stir until golden brown, add chickpeas and meat, stir for a few minutes to lightly brown the meat, add rice, turmeric, salt, black pepper, mixed spices, and the reserved broth.
Bring to a boil on high heat for about a minute, then cover and cook on low heat for about 20 minutes until rice is cooked, serve hot with yogurt and cucumber salad.
