Sticky Orange Tofu with Mixed Stir Fry Veggies

Ingredients

  • 2 tbsp tapioca starch
  • 1-2 tbsp water
  • salt
  • orange sauce:
  • juice of 2 oranges*
  • 2 tbsp rice vinegar
  • 1 tbsp coconut sugar*
  • 1 tbsp coconut aminos
  • 1/2 tsp garlic powder
  • 1/2 tsp chili flakes (or more if you like spicy)
  • veggies and rice of choice

Preparation

  1. Preheat oven to 400 F/200 C

  2. Mix tapioca starch in a shallow bowl with a bit of water and a pinch of salt

  3. Cut tofu into large bite size pieces and coat them with the mixture

  4. Then place pieces on a lined baking sheet and bake for 10 minutes, flip them over and bake for another 10

  5. In the mean time heat up all ingredients for the orange sauce in a small sauce pan and stir in leftover tapioca mixture. Bring to a boil and keep stirring until sauce is thick and bubbly

  6. While tofu is baking also prepare your veggies and rice

  7. I used Jasmine rice and cooked in my instant pot (6 minutes on manual setting) and stir fried broccoli, carrots, sugar snap peas and a red bell pepper in batches in a non stick wok and seasoned them with a splash of coconut aminos

  8. Toss finished tofu with the sauce and serve over rice and veggies
