Vegan Soy Mince and Vegetable Stir-Fry

Ingredients

  • Oil
  • Garlic
  • Onion
  • Vegan soy mince
  • Beans (such as chickpeas or black beans)
  • Chili powder
  • Cumin
  • Paprika
  • Salt
  • Pepper
  • Green peas
  • Crushed tomatoes
  • Tomato paste
  • Soy sauce
  • Vegetable stock
  • Water
  • Rice

Preparation

  1. Boil the rice according to package instructions.

  2. Fry the garlic and onion in some oil.

  3. Add the vegan soy mince and beans.

  4. Add the chili powder, cumin, paprika, salt and pepper. Fry until crispy.

  5. Then add green peas, crushed tomatoes, tomato paste, soy sauce, vegetable stock and some water.

  6. Fry or simmer for 15 minutes.

  7. Serve and enjoy.

Tips

  1. You can swap the beans for black beans.

  2. Skip the green peas if you don't like them.

  3. Swap basmati rice for another type of rice or grain.
