Crunchy Fall Kale Salad
Ingredients
Salad components
- Lacinto kale
- Red onion
- Sliced almonds
- Pumpkin seeds
- Dried berries
- Crunchy chickpeas
- Fresh thyme (optional)
Vinaigrette
- 2 tablespoons extra virgin olive oil
- Juice of 1 lemon
- 2 tablespoons pomegranate juice
- 1 tablespoon apple cider vinegar
- 1-2 teaspoons raw agave or maple syrup
- 1 tablespoon raw cashew base or cashew butter or tahini
- 1/2 teaspoon dried parsley
Preparation
Add the salad ingredients to a large bowl.
Pour the vinaigrette ingredients into a blender and purée until emulsified and creamy. Season to taste.
Drizzle the vinaigrette over the salad and toss to combine.
Tips
This salad holds up well in the refrigerator for several days after being dressed.
