Delicious Mixed Vegetable Salad

Ingredients

  • 1/2 medium cabbage
  • 1/2 medium red cabbage
  • 1 medium carrot
  • 1 medium red bell pepper
  • 1 medium green bell pepper
  • 1 medium green apple
  • 1 medium onion
  • 1 medium cucumber
  • 1 cup chopped broccoli
  • 1/4 cup halved nuts
  • 1/4 cup sunflower seeds
  • 1/4 cup dried cranberries
  • 1/4 cup dried black raisins
  • 15 cherry tomatoes
  • 2 large boiled eggs

Sauce

  • 1 cup yogurt
  • 1 cup mayonnaise
  • 2 tablespoons mustard sauce
  • 1/4 cup lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper

Toast

  • 6 slices toast
  • 2 tablespoons olive oil

Preparation

  1. Boil the eggs until hard-boiled and set aside to cool

  2. Toast the bread slices with olive oil until golden brown

  3. Prepare the sauce by mixing yogurt, mayonnaise, mustard sauce, lemon juice, olive oil, salt, and pepper in a bowl

  4. Wash and chop the cabbage, red cabbage, carrot, bell peppers, apple, onion, cucumber, and broccoli into bite-sized pieces

  5. In a large salad bowl, combine the chopped vegetables, nuts, sunflower seeds, dried cranberries, dried black raisins, cherry tomatoes, and sliced boiled eggs

  6. Pour the prepared sauce over the salad mixture and toss gently to coat all ingredients evenly

  7. Serve the salad immediately with the toasted bread on the side
