Pasta Salad with Mustard Dressing
Ingredients
- 2 cups cooked pasta
- 1 cup grated carrot
- 1/4 cup chopped parsley
- 1 cup chopped white cabbage
- 1 cup chopped red cabbage
- 1/4 cup cooked corn
- 1 medium green bell pepper, chopped
Mustard sauce
- 1 cup yogurt
- 1 tablespoon mustard paste
- 1/4 teaspoon garlic powder
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons lemon juice
- 1/4 teaspoon oregano
Preparation
In a deep bowl, place the pasta, carrot, parsley, white cabbage, and red cabbage. Mix the pasta with the vegetables.
For the sauce: In a deep bowl, place yogurt, mustard, garlic powder, salt, black pepper, lemon juice, and oregano. Mix the ingredients with a hand whisk for one minute to get a homogeneous sauce.
Spread the sauce over the pasta and vegetable mixture.
Transfer the salad to a serving dish. Arrange the corn and green bell pepper attractively.
Place the salad in the refrigerator until ready to serve.
