Pasta Salad with Mustard Dressing

Ingredients

  • 2 cups cooked pasta
  • 1 cup grated carrot
  • 1/4 cup chopped parsley
  • 1 cup chopped white cabbage
  • 1 cup chopped red cabbage
  • 1/4 cup cooked corn
  • 1 medium green bell pepper, chopped

Mustard sauce

  • 1 cup yogurt
  • 1 tablespoon mustard paste
  • 1/4 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons lemon juice
  • 1/4 teaspoon oregano

Preparation

  1. In a deep bowl, place the pasta, carrot, parsley, white cabbage, and red cabbage. Mix the pasta with the vegetables.

  2. For the sauce: In a deep bowl, place yogurt, mustard, garlic powder, salt, black pepper, lemon juice, and oregano. Mix the ingredients with a hand whisk for one minute to get a homogeneous sauce.

  3. Spread the sauce over the pasta and vegetable mixture.

  4. Transfer the salad to a serving dish. Arrange the corn and green bell pepper attractively.

  5. Place the salad in the refrigerator until ready to serve.
