Pasta and Vegetable Salad

Ingredients

  • 300 grams cooked penne pasta
  • 200 grams cherry tomatoes
  • 2 green onion stalks
  • 10 pieces sun-dried tomatoes
  • 5 slices mortadella
  • 1 bunch arugula
  • 1 cup green basil
  • 1/2 cup parsley leaves

Sauce

  • 2 tablespoons balsamic vinegar
  • 1/2 cup olive oil
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper

For serving

  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 piece parmesan cheese
  • 10 walnut halves

Preparation

  1. Cook the pasta according to package instructions, rinse with cold water, and let it cool completely

  2. For the sauce, in a deep bowl put vinegar, oil, oregano, salt, and black pepper, and mix well with a whisk or fork until combined

  3. Prepare the serving dish

  4. Place the pasta in the dish

  5. Chop the arugula into large pieces

  6. Slice the green onion

  7. Cut the cherry tomatoes in half

  8. Chop the sun-dried tomatoes into small pieces

  9. Cut the mortadella into cubes

  10. Add all salad ingredients on top of the pasta

  11. Sprinkle cheddar, mozzarella, parmesan cheese, and walnuts

  12. Drizzle the sauce over the salad before serving
