Chicken Salad with Curry Dressing

Ingredients

  • 3 chicken fillets
  • 2 bay leaves
  • 10 black peppercorns
  • 1 small onion
  • 1/4 teaspoon salt

Dressing

  • 1 cup mayonnaise
  • 2 tablespoons mustard paste
  • 2 tablespoons hot sauce
  • 1 teaspoon curry spices
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon cumin
  • 1/2 teaspoon coriander
  • 1 teaspoon paprika
  • 2 chopped green onion stalks
  • 1/2 head thinly sliced red cabbage
  • 2 chopped green bell peppers
  • 1 thinly sliced sweet red pepper
  • 1/4 cup cashews
  • 1/4 cup raisins
  • 1 cup fresh cilantro or parsley
  • 1 cup pomegranate

Serving

  • lettuce

Preparation

  1. Cook the chicken fillets with bay leaves, black peppercorns, onion, and salt until fully done

  2. In a separate bowl, mix all the dressing ingredients together until well combined

  3. Allow the cooked chicken to cool and then shred or chop it into bite-sized pieces

  4. Combine the chicken with the dressing mixture and toss to coat evenly

  5. Serve the salad on a bed of lettuce
