Chicken Salad with Curry Dressing
Ingredients
- 3 chicken fillets
- 2 bay leaves
- 10 black peppercorns
- 1 small onion
- 1/4 teaspoon salt
Dressing
- 1 cup mayonnaise
- 2 tablespoons mustard paste
- 2 tablespoons hot sauce
- 1 teaspoon curry spices
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon cumin
- 1/2 teaspoon coriander
- 1 teaspoon paprika
- 2 chopped green onion stalks
- 1/2 head thinly sliced red cabbage
- 2 chopped green bell peppers
- 1 thinly sliced sweet red pepper
- 1/4 cup cashews
- 1/4 cup raisins
- 1 cup fresh cilantro or parsley
- 1 cup pomegranate
Serving
- lettuce
Preparation
Cook the chicken fillets with bay leaves, black peppercorns, onion, and salt until fully done
In a separate bowl, mix all the dressing ingredients together until well combined
Allow the cooked chicken to cool and then shred or chop it into bite-sized pieces
Combine the chicken with the dressing mixture and toss to coat evenly
Serve the salad on a bed of lettuce
