Spiced Chicken with Mushroom Sauce

Ingredients

  • 3 large chicken fillets
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cardamom
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 4 tablespoons butter
  • 3 cups sliced mushrooms
  • 3 cups chicken broth
  • Flour (for coating)

Garnish

  • chopped parsley

For serving

  • white rice

Preparation

  1. Cut each chicken fillet piece into three thick pieces crosswise.

  2. Take two pieces of parchment paper, oil them, place the chicken on them, and pound lightly.

  3. In a bowl, mix the salt, pepper, garlic powder, cardamom, cumin, coriander, chili, and paprika then spread half of the spices over the chicken.

  4. In a skillet, heat 2 tablespoons of butter, coat the chicken pieces in flour to cover generously, then place them in the skillet and cook until golden brown then transfer to a side plate.

  5. To the same skillet, add the remaining butter, mushrooms, and the remaining spices then sauté for a few minutes.

  6. Add the chicken broth and let it boil then return the chicken to the pan and let it simmer for a few minutes.

  7. On a serving plate, pour the chicken with the mushroom sauce and garnish with parsley.
