Spiced Chicken with Mushroom Sauce
Ingredients
- 3 large chicken fillets
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon ground cardamom
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1 teaspoon chili powder
- 1 teaspoon paprika
- 4 tablespoons butter
- 3 cups sliced mushrooms
- 3 cups chicken broth
- Flour (for coating)
Garnish
- chopped parsley
For serving
- white rice
Preparation
Cut each chicken fillet piece into three thick pieces crosswise.
Take two pieces of parchment paper, oil them, place the chicken on them, and pound lightly.
In a bowl, mix the salt, pepper, garlic powder, cardamom, cumin, coriander, chili, and paprika then spread half of the spices over the chicken.
In a skillet, heat 2 tablespoons of butter, coat the chicken pieces in flour to cover generously, then place them in the skillet and cook until golden brown then transfer to a side plate.
To the same skillet, add the remaining butter, mushrooms, and the remaining spices then sauté for a few minutes.
Add the chicken broth and let it boil then return the chicken to the pan and let it simmer for a few minutes.
On a serving plate, pour the chicken with the mushroom sauce and garnish with parsley.
