Potato Salad Buddha Bowl

- Rosemary roasted potatoes
- Tomatoes
- Cucumbers
- Green peppers
- Red onion
- Lemon
- Oil and vinegar
- Sumac
- Oregano
- Purple cabbage
- Cashews
- Avocado
- Black sesame seeds
- Mixed greens
- Tahini
- Sriracha
Preparation
Roast potatoes with rosemary until golden and tender.
Chop tomatoes, cucumbers, green peppers, red onion, and purple cabbage into bite-sized pieces.
Prepare a dressing by combining lemon juice, oil, vinegar, sumac, and oregano; mix well.
Arrange mixed greens as the base in a bowl.
Add roasted potatoes, chopped vegetables, cashews, avocado slices, black sesame seeds, tahini, and sriracha on top.
Toss gently or serve as is for a fresh, assembled bowl.
