Potato Salad Buddha Bowl

Ingredients

  • Rosemary roasted potatoes
  • Tomatoes
  • Cucumbers
  • Green peppers
  • Red onion
  • Lemon
  • Oil and vinegar
  • Sumac
  • Oregano
  • Purple cabbage
  • Cashews
  • Avocado
  • Black sesame seeds
  • Mixed greens
  • Tahini
  • Sriracha

Preparation

  1. Roast potatoes with rosemary until golden and tender.

  2. Chop tomatoes, cucumbers, green peppers, red onion, and purple cabbage into bite-sized pieces.

  3. Prepare a dressing by combining lemon juice, oil, vinegar, sumac, and oregano; mix well.

  4. Arrange mixed greens as the base in a bowl.

  5. Add roasted potatoes, chopped vegetables, cashews, avocado slices, black sesame seeds, tahini, and sriracha on top.

  6. Toss gently or serve as is for a fresh, assembled bowl.
