Summer Inspired Potato Salad with Fresh Vegetables
Ingredients
- 900g firm potatoes
- 3 diced spring onions
- 1 small diced red onion
- Arugula or spinach
- Diced cocktail tomatoes
- 1/2 bell pepper, red or yellow
- Salt and pepper
- 2 tbsp dijon mustard
- 200ml vegan mayonnaise or crème fraîche
- 50ml oat cream or water
- 1/2 tbsp lemon juice
- Chives
Optional additions
- tofu
- sweet corn
- sundried tomatoes
Preparation
Halve the potatoes and boil until soft. Pour away the water and allow to cool slightly.
In a bowl, mix together the crème fraîche, mustard, oat cream, and lemon juice.
Add the vegetables to the potatoes and then pour the crème fraîche mixture over them.
Eat and enjoy, optionally with marinated and fried tofu or vegan burgers.
