Creamy Chickpea Salad with Summer Food Inspiration
Ingredients
- 1 can chickpeas (c.a 240g)
- 1/2 red onion, diced
- 1 carrot, peeled & diced
- 2 spring onions, diced
- 1/2 red bell pepper
- 1/2 yellow bell pepper
- 1/2 tbsp mustard
- 1 tsp apple cider vinegar or lemon juice
- Salt & pepper, generous amount
- Sweet corn
- 2-3 heaped tbsp vegan mayonnaise or creme fraiche
- Optional: pickles and/or pickle juice
- Optional: some celery
Preparation
In a mixer, combine all ingredients except sweet corn and mayonnaise. Blend for about 20 seconds.
Add the sweet corn and mayonnaise to the mixture. Blend again until well combined.
Taste the salad and adjust seasoning according to your preference.
