Tofu Egg Salad Wraps

Ingredients

  • 250g firm tofu
  • 3 spring onions
  • 1/2 red onion
  • 1/2 bell pepper
  • 2 tbsp mustard (preferably Dijon)
  • 200 ml vegan mayonnaise or vegan crème fraîche
  • 1/4 tsp kala namak
  • A few drops apple cider vinegar or lemon juice
  • Salt and pepper
  • Pinch of cayenne
  • Liba bread or pita bread

Optional additions

  • 1/4 tsp turmeric for colour
  • Sweet corn for sweetness and crunch
  • Avocado
  • Salad greens

Preparation

  1. Crumble the tofu.

  2. Add the veggies, diced into small pieces.

  3. Add the mustard and crème fraîche.

  4. Add a few drops of the apple cider vinegar along with the kala namak, salt, pepper and cayenne.

  5. Mix everything together.

  6. Taste and adjust seasoning.

  7. Place in the fridge for 30-60 minutes before eating with some wraps or pita bread.
