Tofu "Egg" Salad Wraps
Ingredients
- 250g tofu (use a firm type)
- 3 spring onion
- 1/2 red onion
- 1/2 bell pepper
- 2tbsp mustard (preferably dijon!)
- 200ml vegan mayonnaise or vegan creme fraiche
- 1/4tsp kala namak
- a few drops of apple cider vinegar (or lemon juice)
- salt & pepper
- pinch of cayenne
- liba bread or pita bread
Preparation
Crumble the tofu
Add the veggies (diced into small pieces)
Add the mustard and creme fraiche
Add a few drops of the apple cider vinegar along with the kala namak, salt, pepper and cayenne
Mix
Taste and adjust seasoning
Place in the fridge for 30-60 minute's before eating with some wraps or pita bread
