Tofu "Egg" Salad Wraps

Ingredients

  • 250g tofu (use a firm type)
  • 3 spring onion
  • 1/2 red onion
  • 1/2 bell pepper
  • 2tbsp mustard (preferably dijon!)
  • 200ml vegan mayonnaise or vegan creme fraiche
  • 1/4tsp kala namak
  • a few drops of apple cider vinegar (or lemon juice)
  • salt & pepper
  • pinch of cayenne
  • liba bread or pita bread

Preparation

  1. Crumble the tofu

  2. Add the veggies (diced into small pieces)

  3. Add the mustard and creme fraiche

  4. Add a few drops of the apple cider vinegar along with the kala namak, salt, pepper and cayenne

  5. Mix

  6. Taste and adjust seasoning

  7. Place in the fridge for 30-60 minute's before eating with some wraps or pita bread
