Tofu Egg Salad Wraps
Ingredients
- 250g firm tofu
- 3 spring onions
- 1/2 red onion
- 1/2 bell pepper
- 2 tbsp mustard (preferably Dijon)
- 200 ml vegan mayonnaise or vegan crème fraîche
- 1/4 tsp kala namak
- A few drops apple cider vinegar or lemon juice
- Salt and pepper
- Pinch of cayenne
- Liba bread or pita bread
Optional additions
- 1/4 tsp turmeric for colour
- Sweet corn for sweetness and crunch
- Avocado
- Salad greens
Preparation
Crumble the tofu.
Add the veggies, diced into small pieces.
Add the mustard and crème fraîche.
Add a few drops of the apple cider vinegar along with the kala namak, salt, pepper and cayenne.
Mix everything together.
Taste and adjust seasoning.
Place in the fridge for 30-60 minutes before eating with some wraps or pita bread.
