Tofu Egg Salad Wraps
Ingredients
- 250g firm tofu
- 3 spring onions
- 1/2 red onion
- 1/2 bell pepper
- 2 tbsp mustard (preferably dijon)
- 200ml vegan mayonnaise or vegan creme fraiche
- 1/4 tsp kala namak
- A few drops of apple cider vinegar or lemon juice
- Salt and pepper to taste
- Pinch of cayenne
- Liba bread or pita bread
Optional additions
- 1/4 tsp turmeric for color
- Some sweet corn
- Avocado
- Salad
Preparation
Crumble the tofu.
Add the veggies diced into small pieces.
Add the mustard and creme fraiche.
Add a few drops of apple cider vinegar along with kala namak, salt, pepper, and cayenne.
Mix everything together.
Taste and adjust seasoning.
Place the mixture in the fridge for 30-60 minutes.
Serve with wraps or pita bread.
