Tofu Egg Salad Wraps

Ingredients

  • 250g firm tofu
  • 3 spring onions
  • 1/2 red onion
  • 1/2 bell pepper
  • 2 tbsp mustard (preferably dijon)
  • 200ml vegan mayonnaise or vegan creme fraiche
  • 1/4 tsp kala namak
  • A few drops of apple cider vinegar or lemon juice
  • Salt and pepper to taste
  • Pinch of cayenne
  • Liba bread or pita bread

Optional additions

  • 1/4 tsp turmeric for color
  • Some sweet corn
  • Avocado
  • Salad

Preparation

  1. Crumble the tofu.

  2. Add the veggies diced into small pieces.

  3. Add the mustard and creme fraiche.

  4. Add a few drops of apple cider vinegar along with kala namak, salt, pepper, and cayenne.

  5. Mix everything together.

  6. Taste and adjust seasoning.

  7. Place the mixture in the fridge for 30-60 minutes.

  8. Serve with wraps or pita bread.
