Colorful Mexican Burritos
Ingredients
- 2 avocados
- 1 tomato
- Juice of 1 lemon
- Olive oil
- 1 pinch chilli
- salt, pepper
- Handful basil
- Handful cilantro
- For the filling:
- 1pck plantbased minced meat
- 2 red onions
- 1 small can corn
- 1 green Paprika
- 3 garlic cloves
- olive oil
- 1/2 can kindney beans
- 1 pinch chilli
- salt, pepper
- Tomatoes
- Cucumber
- Salad
- For the sauce:
- 1 pck. Plantbased curd cheese
- Handful mint leaves
- Handful basil
- 1/2 lemon
- salt, pepper
Preparation
Smash the avocados
Cut basil, cilantro and tomato
Mix all ingredients for the guacamole together
Cut the paprika in small cubes
Chop the onions and garlic
Fry in oil, add paprika
Add the plantbased minced meat
Add the corn and beans
Spice with chilli, salt and pepper
Cut the tomatoes, cucumber and salad
Mix all ingredients for the sauce together
Fry the tortillas from both sides in a pan
Tortillas with the filling, tomatoes, cucumber, salad and guacamole and serve withthe sauce
