Maple Pecan French Toast Skillet

Ingredients

  • 3 eggs
  • 2 scoops vanilla protein
  • 1/2 cup unsweetened almond milk
  • 1 tablespoon cinnamon
  • 1/4 cup pure maple syrup
  • 1/4 cup coconut sugar
  • 1/4 cup chopped pecans (optional)
  • 4 1/2 cups sourdough bread cubes

Preparation

  1. Whisk together 3 eggs.

  2. Combine 2 scoops vanilla protein, 1/2 cup unsweetened almond milk, 1 tablespoon cinnamon, 1/4 cup pure maple syrup, 1/4 cup coconut sugar, and 1/4 cup chopped pecans.

  3. Mix everything together and add 4 1/2 cups of sourdough bread cubes.

  4. Soak the mixture in the refrigerator for 30 minutes.

  5. Spray a skillet with nonstick spray.

  6. Pour the mixture into the skillet and top with additional pecans.

  7. Preheat the oven to 400°F

  8. Bake in the oven for 25 to 30 minutes.
