Vegan French Toast with Caramelized Bananas

Ingredients

  • 1 tablespoon flaxseed meal
  • 2.5 tablespoons water
  • 1 cup unsweetened almond milk
  • 1 teaspoon cinnamon
  • 1 teaspoon coconut sugar
  • 1/2 teaspoon vanilla
  • coconut oil
  • bread for 4 slices

Toppings

  • 1 banana
  • cinnamon
  • coconut oil
  • maple syrup

Preparation

  1. Makes 4 slices of French toast.

  2. In a small bowl, make a flax egg by combining 1 tablespoon flaxseed meal with 2.5 tablespoons water. Mix together and let it sit for 5 minutes to thicken.

  3. In a larger bowl, combine 1 cup unsweetened almond milk, 1 teaspoon cinnamon, 1 teaspoon coconut sugar, and 1/2 teaspoon vanilla.

  4. Add the flax egg to the mixture and whisk everything together.

  5. Dip bread slices into the mixture and cook in coconut oil over medium-low heat for a few minutes on each side.

  6. For caramelized bananas, slice a banana into coins, sprinkle with cinnamon, and cook in coconut oil for 30 seconds on each side.

  7. Top with maple syrup.

Tips

  1. You can substitute a regular egg for the flax egg if desired.
