Vegan French Toast with Caramelized Bananas
Ingredients
- 1 tablespoon flaxseed meal
- 2.5 tablespoons water
- 1 cup unsweetened almond milk
- 1 teaspoon cinnamon
- 1 teaspoon coconut sugar
- 1/2 teaspoon vanilla
- coconut oil
- bread for 4 slices
Toppings
- 1 banana
- cinnamon
- coconut oil
- maple syrup
Preparation
Makes 4 slices of French toast.
In a small bowl, make a flax egg by combining 1 tablespoon flaxseed meal with 2.5 tablespoons water. Mix together and let it sit for 5 minutes to thicken.
In a larger bowl, combine 1 cup unsweetened almond milk, 1 teaspoon cinnamon, 1 teaspoon coconut sugar, and 1/2 teaspoon vanilla.
Add the flax egg to the mixture and whisk everything together.
Dip bread slices into the mixture and cook in coconut oil over medium-low heat for a few minutes on each side.
For caramelized bananas, slice a banana into coins, sprinkle with cinnamon, and cook in coconut oil for 30 seconds on each side.
Top with maple syrup.
Tips
You can substitute a regular egg for the flax egg if desired.
