Cinnamon Banana French Toast Sticks

Ingredients

  • 4 slices of bread
  • 1 cup dairy-free milk
  • 1 Tbsp ground flax seed
  • 1 medium banana
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 1 Tbsp oil

Toppings

  • 1/3 cup maple syrup
  • 1/4 cup walnuts

Preparation

  1. Cut the slices of bread into sticks and set aside.

  2. Combine the mashed banana, milk, cinnamon, vanilla, and ground flax seed in a large bowl and whisk.

  3. Place the mixture in the refrigerator for 10 minutes to thicken.

  4. Completely dunk the French toast sticks in the mixture, covering all sides, and repeat for all sticks.

  5. Heat a large pan on medium heat, and once hot, add the oil to the pan.

  6. Add 3-4 coated sticks to the pan, avoiding adding too many at once.

  7. Fry the sticks on both sides until golden brown.

  8. Serve with walnuts, bananas, and maple syrup.
