Vanilla Cardamom Oats with Caramelized Bananas

Ingredients

  • 1/2 cup rolled oats
  • 1 tbsp ground flax seed
  • 1/2 tsp cinnamon
  • Pinch of ground cardamom
  • Pinch of nutmeg
  • 1/2 tsp vanilla
  • 1 banana
  • 1 cup almond milk

Banana topping

  • 1/2 banana
  • 2 tsp maple syrup
  • 2 tsp water
  • Pinch of cinnamon
  • Pinch of salt

Preparation

  1. Add all ingredients to a saucepan and bring to a simmer.

  2. Allow to cook for about 5 minutes to thicken and then remove from the stove top.

Caramelizing bananas

  1. Slice half a banana into 1/4 inch slices and place on a greased pan or good quality non-stick pan.

  2. Cook for about a minute on low-medium heat without touching.

  3. Add 2 tsp maple syrup, 2 tsp of water, a pinch of cinnamon, and a pinch of salt.

  4. Flip banana slices carefully and cook on the other side for another 1-2 minutes.

  5. Top oats with cooked bananas.
