Ripe Plantain Oatmeal with Tahini Chocolate Sauce
Ingredients
Oatmeal
- 1/2 cup rolled oats
- 1 tbsp ground flax seed
- Pinch of salt
- 1/2 super ripe plantain (if the plantain is super big feel free to use a 1/3 or replace with a regular banana)
- 1/4 tsp cinnamon
- 1 1/4 cup unsweetened almond milk
Chocolate sauce
- 1 tbsp tahini
- 1 tsp maple syrup
- 1 tsp chocolate powder
- pinch of salt
- 1 tbsp water
Preparation
In a saucepan, combine all oatmeal ingredients. Mash or chop the plantain into smaller pieces as it cooks. Cook for 5-8 minutes, adding additional almond milk or water if the consistency is too thick.
For baked plantain slices, preheat oven to 400°F. Peel and slice ripe plantains into thick coins, place on a lined baking sheet, and bake for 13-15 minutes.
For chocolate sauce, combine 1 tbsp tahini, 1 tsp maple syrup, 1 tsp chocolate powder, a pinch of salt, and 1 tbsp water. Whisk together until smooth, and adjust consistency to preference. Pour over the oatmeal and enjoy.
