Cinnamon Banana French Toast Sticks
Ingredients
- 4 slices of bread (substitute with gluten-free bread if desired)
- 1 cup dairy-free milk (such as almond milk)
- 1 tbsp ground flaxseed
- 1 medium banana, mashed into a paste
- 1 tsp cinnamon
- 1 tsp vanilla
- 1 tbsp oil (canola spray oil or coconut oil, for the pan)
Toppings
- 1/3 cup maple syrup
- 1/4 cup walnuts
Preparation
Cut the slices of bread into sticks. Set them aside.
In a large bowl, combine the mashed banana, dairy-free milk, cinnamon, vanilla, and ground flaxseed. Whisk the mixture together. Place it in the refrigerator for 10 minutes to thicken.
Whisk the mixture once more. Dunk each bread stick into the mixture, making sure to coat all sides. Repeat until all sticks are covered.
Heat a large pan over medium heat. Once hot, add the oil to the pan. Add 3-4 coated sticks to the pan, making sure not to overcrowd it.
Fry the bread slices on both sides until they turn golden brown. Cook each side for about 2 minutes.
Serve the French toast sticks with walnuts, bananas, and maple syrup.
