Vegan Pumpkin French Toast

Ingredients

  • 1 tablespoon flaxseed meal
  • 2.5 tablespoons water
  • 1 loaf bread
  • vegan cream cheese (1 to 1.5 tablespoons per slice)
  • 3/4 cup unsweetened almond milk
  • 2 tablespoons organic pumpkin purée
  • 1 teaspoon cinnamon
  • 1/2 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla
  • 2 to 3 teaspoons maple syrup

Preparation

  1. Make a flax egg by whisking 1 tablespoon flaxseed meal and 2.5 tablespoons water in a small bowl, then set aside for 5 minutes to thicken.

  2. Slice a loaf of bread into 5 thick slices.

  3. Spread about 1 to 1.5 tablespoons of vegan cream cheese on one side of each slice and fold in half.

  4. In a shallow bowl, combine 3/4 cup unsweetened almond milk, 2 tablespoons organic pumpkin purée, 1 teaspoon cinnamon, 1/2 teaspoon pumpkin pie spice, 1/2 teaspoon vanilla, and 2 to 3 teaspoons maple syrup.

  5. Mix the flax egg into the mixture and stir well.

  6. Soak each piece of folded bread on both sides in the mixture.

  7. Heat coconut oil in a pan over medium heat.

  8. Add the soaked bread to the pan and cook for 3 to 4 minutes on each side.

  9. Serve topped with a little maple syrup and pumpkin spice.

Tips

  1. For a non-vegan version, use a regular egg instead of flax egg and regular cream cheese.
