3-Ingredient Vegan French Toast
Ingredients
- 1 tin chickpeas
- 1 scoop (40g) vegan protein powder
- 4 slices sourdough bread
Optional
- cinnamon
- maple syrup
- oil for cooking
Preparation
Drain the chickpeas and reserve the starchy chickpea brine (aquafaba)
In a large flat bowl, mix 1/2 cup of aquafaba with the protein powder until no lumps remain. Optionally, add cinnamon and maple syrup
Soak both sides of each bread slice in the mixture
Heat a non-stick fry pan on medium high heat. Optionally, add a bit of oil to coat. Fry each side of the French toast for 2 minutes until golden and flip
Transfer to a plate and decorate with toppings of choice
