Vegan Chocolate French Toast with Fruit

Ingredients

  • 1 mashed banana
  • 50 ml plant milk
  • 1/2 teaspoon cinnamon
  • 1-2 teaspoons cocoa powder
  • 1/2 teaspoon vanilla extract
  • optional 1 tablespoon chickpea flour
  • toast slices

Toppings

  • coconut yogurt
  • raspberry jam
  • berries
  • maple syrup

Preparation

  1. Whisk together a mashed banana, 50 ml plant milk, 1/2 teaspoon cinnamon, 1-2 teaspoons cocoa powder, 1/2 teaspoon vanilla extract and optional 1 tablespoon chickpea flour.

  2. Add the toast slices and turn to coat.

  3. Cook the toasts in a pan on low to medium heat from both sides until crispy, about 3 to 5 minutes per side.

  4. Serve with coconut yogurt, raspberry jam, berries, and drizzle with maple syrup.
