Vegan Gingerbread Chia Pudding

Ingredients

  • 3 tbsp chia seeds
  • 2 Lotus cookies
  • 150 gr soy yoghurt
  • 150 ml almond milk
  • 1/2 mashed banana
  • 1/4 tbsp vanilla extract
  • 1/2 tsp cinnamon
  • A handful of blackberries

Preparation

  1. Mix the chia seeds, banana and milk and transfer it to a jar.

  2. Let it rest overnight.

  3. Add the cookies, pudding and yoghurt to a jar and add berries and cinnamon.

  4. That’s it! Enjoy!
