Vegan Spinach Banana Pancakes with Chia Jam
Ingredients
- 2 bananas
- 1 cup oats
- 1 flax egg
- 1 large handful of spinach
- 1/4 cup almond milk
- Vanilla extract
- Frozen strawberries
- 1 tablespoon chia seeds
Preparation
Blend the spinach, almond milk, and bananas together.
Add the oats, flax egg, and vanilla extract, then blend until smooth.
Pour the batter onto a hot griddle or pan.
Cook until bubbles form on the surface, then flip and cook until golden brown.
Chia jam
Microwave frozen strawberries for 1 minute.
Add 1 tablespoon of chia seeds and let sit until the mixture thickens.
