Vegan Spinach Banana Pancakes with Chia Jam

Ingredients

  • 2 bananas
  • 1 cup oats
  • 1 flax egg
  • 1 large handful of spinach
  • 1/4 cup almond milk
  • Vanilla extract
  • Frozen strawberries
  • 1 tablespoon chia seeds

Preparation

  1. Blend the spinach, almond milk, and bananas together.

  2. Add the oats, flax egg, and vanilla extract, then blend until smooth.

  3. Pour the batter onto a hot griddle or pan.

  4. Cook until bubbles form on the surface, then flip and cook until golden brown.

Chia jam

  1. Microwave frozen strawberries for 1 minute.

  2. Add 1 tablespoon of chia seeds and let sit until the mixture thickens.
