Vegan Gingerbread Chia Pudding
Ingredients
- 3 tbsp chia seeds
- 2 Lotus cookies
- 150 g soy yoghurt
- 150 ml almond milk
- 1/2 mashed banana
- 1/4 tbsp vanilla extract
- 1/2 tsp cinnamon
- A handful of blackberries
Preparation
Mix the chia seeds, mashed banana, and almond milk, then transfer to a jar and let it rest overnight in the refrigerator.
The next morning, crumble the Lotus cookies into a serving glass.
Add the chia pudding and soy yoghurt.
Top with cinnamon and blackberries, and enjoy.
