Vegan Gingerbread Chia Pudding

Ingredients

  • 3 tbsp chia seeds
  • 2 Lotus cookies
  • 150 g soy yoghurt
  • 150 ml almond milk
  • 1/2 mashed banana
  • 1/4 tbsp vanilla extract
  • 1/2 tsp cinnamon
  • A handful of blackberries

Preparation

  1. Mix the chia seeds, mashed banana, and almond milk, then transfer to a jar and let it rest overnight in the refrigerator.

  2. The next morning, crumble the Lotus cookies into a serving glass.

  3. Add the chia pudding and soy yoghurt.

  4. Top with cinnamon and blackberries, and enjoy.
