Healthy Blended Chia Pudding
Ingredients
- Chia seeds
- Carrot, berries, or apple
- Nut butter or tahini
- Medjool dates or maple syrup
- Vanilla extract
- Cinnamon
Walnut cream
- Raw walnuts, cashews, or blanched almonds
- Nondairy milk
- Medjool dates
- Vanilla extract
Preparation
Blend the carrot or chosen fruit with nut butter or tahini, sweetener, vanilla extract, and cinnamon until smooth
Mix the blended mixture with chia seeds in a bowl and stir well to combine
Let the mixture sit for at least 15-30 minutes or refrigerate to thicken
For the walnut cream, blend the nuts, nondairy milk, dates, and vanilla extract until creamy
Serve the chia pudding topped with the walnut cream

Serves 4. Swap carrot for berries or apple if you prefer fruit over veggies
