Chipotle Black Beans

Ingredients

  • chipotle black beans
  • 1 can black beans (feel free to use no salt added beans)
  • 1/2 yellow onion
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 2 tsp oregano
  • 1/2 tbsp maple syrup
  • 1/2 tbsp chipotle powder
  • 1/4 cup vegetable broth
  • 1 tbsp tomato paste
  • juice of 1/2 a lime ?

Preparation

  1. In a large sauce pan, add the onion and garlic

  2. Cook onion until softened, about 2-3 minutes

  3. Add tomato paste and seasonings and allow to cook until fragrant, about 2 minutes

  4. Add beans, broth and maple syrup

  5. Stir to combine and bring to a simmer

  6. Allow mixture to cook for 10 minutes

  7. Remove from heat and mix in lime juice

  8. Adjust seasonings and salt to your preference

  9. Depending on the chipotle powder you use, it can get quite spicy, so be careful
