Stewed Black Beans

Ingredients

  • 1 can black beans, rinsed and drained
  • 1/2 can diced tomatoes
  • 1 tbsp tomato paste
  • 3 cloves garlic, minced
  • 1 tbsp chipotle powder
  • 2 tsp oregano
  • 1 cup veggie broth
  • 1/2 tsp red pepper flakes ?

Preparation

  1. Add garlic to a pan and sauté until fragrant

  2. Add in tomatoes, tomato past and seasonings

  3. Stir and allow to come to a simmer, then add in remaining ingredients

  4. Simmer dish for about 20 minutes or h til mixture thickens

  5. Add a squeeze of fresh lime at the end is always welcome
