Sweet Potato Quinoa Bean Chili
Ingredients
- 5 cloves minced garlic
- 3 tbsp tomato paste
- 1 can fire roasted tomatoes
- 1 large or 2 medium sweet potatoes, diced into half inch cubes (skin on)
- 1 cup dried quinoa, rinsed
- 1 can black beans, drained and rinsed
- 1 can kidney beans, drained and rinsed
- 3 cups veggie broth
- chili powder, cumin, smoked paprika, oregano, garlic powder, pinch cayenne
Preparation
In a large pot over medium-low heat, sauté minced garlic for 2-3 minutes until fragrant, add all the spices (about 1 tablespoon each) and toast for another 2 minutes, then spoon in the tomato paste and mix.
Add the canned tomatoes, dry quinoa, beans, and veggie broth to cover, bring to a boil, then lower the heat to simmer and cover slightly ajar.
Cook for 15-25 minutes until all ingredients are cooked, then add salt and pepper to taste, and more seasoning if necessary.
