Sweet Potato and Black Bean Tortilla Soup
Ingredients
- 1 pepper diced
- 1 onion diced
- olive oil
- 3 cups chopped sweet potatoes
- 1 15 ounce can of corn
- 1 15 ounce can of black beans
- 1 15 ounce can of diced tomatoes
- 4 cups of veggie broth
- 1 1/2 tbsp garlic powder
- 1 tsp onion powder
- 1 tsp chili powder
- 1 1/2 tsp cumin
- 1 tsp Chipotle powder
- 1/2 tsp salt
Preparation
Turn Instant Pot to sauté mode and add onion and pepper, sauté for 5 minutes in olive oil.
Add all remaining ingredients and stir together.
Lock the lid on and pressure cook on high for 4 minutes.
Let sit for 5 minutes then quick release.
Serve with tortillas, avocado, salsa, or whatever you want.
