Minced Tempeh with Chipotle and Fresh Herbs
Ingredients
- 1 package of tempeh, crumbled
- 1 red onion, diced
- 3 cloves garlic, minced
- 2 tbsp tomato paste
- 1 cup vegetable broth
- 2 tsp chipotle powder
- 2 tsp oregano
- 2 tsp basil
- Salt and pepper to taste
Preparation
In a sauté pan, add onion and cook until softened, 2-3 minutes.
Add in garlic and allow to become fragrant.
Add tomato paste, stirring for about 2 minutes.
Add seasonings, tempeh and vegetable broth.
Bring mixture to a simmer and allow to cook for 10-15 minutes until liquid is fully absorbed.
Season to your preference and enjoy.
