Minced Tempeh with Chipotle and Fresh Herbs

Ingredients

  • 1 package of tempeh, crumbled
  • 1 red onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 cup vegetable broth
  • 2 tsp chipotle powder
  • 2 tsp oregano
  • 2 tsp basil
  • Salt and pepper to taste

Preparation

  1. In a sauté pan, add onion and cook until softened, 2-3 minutes.

  2. Add in garlic and allow to become fragrant.

  3. Add tomato paste, stirring for about 2 minutes.

  4. Add seasonings, tempeh and vegetable broth.

  5. Bring mixture to a simmer and allow to cook for 10-15 minutes until liquid is fully absorbed.

  6. Season to your preference and enjoy.
