Stove Top Ratatouille with Polenta

Ingredients

  • 1 aubergine
  • 1 large courgette
  • 1 red onion
  • 2 cloves of garlic
  • bunch of basil
  • bunch of parsley
  • bunch of oregano
  • 1 tin of chopped tomatoes
  • 100g cooked polenta (prepare before, refrigerate & cut into squares/rectangles)
  • salt & pepper

Preparation

  1. Start by prepping the aubergine; cut it lengthways & then in 1-2cm cubes

  2. In a dry pan (no oil) with salt sauté it off until it is cooked, about 7-10 mins

  3. Remove from pan & set aside

  4. Finely dice the onion & garlic & chop the courgette into the same sized cubes as the aubergine

  5. In the same pan where you cooked the aubergine, heat some oil & sauté the onions until soft (about 5 mins) & then add the garlic for one minute & then the courgette

  6. After about 8 minutes add the aubergine back in & pour in the can of chopped tomatoes

  7. Fill the empty can with water & add back into the pan

  8. Bring it all to a boil & then reduce to a simmer, adding half of the chopped fresh herbs but reserving the other half for later

  9. Take out the cooled polenta from the fridge (prepare it in advance according to packaging) & cut into a rectangle

  10. Heat a frying pan & fry for 3 mins either side

  11. Serve the ratatouille with the polenta & a final sprinkling of herbs !
