Vegan Béchamel Pasta with Soy Mince
Ingredients
- 1 cup dried soy
- 2 cups vegetable broth
- 1/3 cup onions
- 2 garlic cloves, crushed
- 1/3 cup carrots, diced
- 1/3 cup celery, diced
- 1 tbsp tomato paste
- 1 cup chopped tomatoes
- Basil, to taste
- Salt, to taste
- Pepper, to taste
- Handful of chopped parsley
Preparation
Soak 1 cup of dried soy in 2 cups of vegetable broth and let it sit for half an hour.
Squeeze the soaked soy to remove excess liquid and let it dry in a sieve.
In a saucepan, sauté onions and crushed garlic until softened. Add diced carrots and celery and sauté for 5 minutes.
Stir in tomato paste and chopped tomatoes, cooking over medium heat.
Once the tomatoes have melted, add basil, salt, and pepper. Adjust consistency with water or broth if needed.
Turn off the heat, and mix in a handful of chopped parsley.
