Dairy-Free Alfredo Pasta with Hidden Veggies


  • ZENB gluten-free yellow pea pasta
  • Broccoli
  • 2 tbsp avocado oil
  • 3 cloves of garlic, minced
  • 3 cups cauliflower florets
  • 1 cup unsweetened almond milk
  • 1 tsp Dijon mustard
  • 1 tsp salt
  • 1/2 tsp pepper
  • Optional red pepper flakes


  1. Bring a large pan of water and a pinch of salt to a boil.

  2. Add ZENB pasta and broccoli to the boiling water. Cook for 13 minutes.

  3. Meanwhile, heat avocado oil in a large saucepan and add minced garlic. Sauté until fragrant.

  4. Add cauliflower florets and unsweetened almond milk to the saucepan. Cover with a lid and cook for 8-10 minutes, or until the cauliflower is fork-tender.

  5. Transfer the cooked ingredients from the saucepan to a blender.

  6. Add Dijon mustard, salt, and pepper to the blender.

  7. Blend until the mixture is smooth and creamy.

  8. Drain the cooked pasta and broccoli, then return them to the pan.

  9. Pour the cauliflower alfredo sauce over the pasta and broccoli. Mix well to coat.

  10. If desired, sprinkle red pepper flakes on top for some heat.

  11. Serve the dairy-free alfredo pasta with hidden veggies and enjoy!
