Roasted Vegetables with Cilantro Pasta

Ingredients

  • Pasta (your favorite)
  • Broccoli
  • Onions
  • Carrots
  • Cauliflower
  • Mushrooms
  • Sweet corn
  • Jalapeños
  • Squash
  • Tomatoes
  • Celery
  • Green bell pepper (roasted, one)
  • Garlic cloves (roasted, 2)
  • Cilantro (handful)
  • Limes (1-2)
  • Agave (1 tablespoon)
  • Pepper
  • Basil (optional)
  • Salt
  • Olive oil (1/2 tablespoon)

Preparation

  1. Cook your favorite pasta according to package instructions.

  2. Roast or bake the vegetables: broccoli, onions, carrots, cauliflower, mushrooms, sweet corn, jalapeños, squash, tomatoes, and celery.

  3. In a blender, add one roasted green bell pepper, 2 roasted garlic cloves, a handful of cilantro, 1-2 limes, 1 tablespoon of agave, pepper, optional basil, salt, and 1/2 tablespoon olive oil to prepare the sauce.

  4. Combine the cooked pasta, roasted vegetables, and sauce, then enjoy warm.
