Roasted Vegetables with Cilantro Pasta
Ingredients
- Pasta (your favorite)
- Broccoli
- Onions
- Carrots
- Cauliflower
- Mushrooms
- Sweet corn
- Jalapeños
- Squash
- Tomatoes
- Celery
- Green bell pepper (roasted, one)
- Garlic cloves (roasted, 2)
- Cilantro (handful)
- Limes (1-2)
- Agave (1 tablespoon)
- Pepper
- Basil (optional)
- Salt
- Olive oil (1/2 tablespoon)
Preparation
Cook your favorite pasta according to package instructions.
Roast or bake the vegetables: broccoli, onions, carrots, cauliflower, mushrooms, sweet corn, jalapeños, squash, tomatoes, and celery.
In a blender, add one roasted green bell pepper, 2 roasted garlic cloves, a handful of cilantro, 1-2 limes, 1 tablespoon of agave, pepper, optional basil, salt, and 1/2 tablespoon olive oil to prepare the sauce.
Combine the cooked pasta, roasted vegetables, and sauce, then enjoy warm.
